Yup. I'd guess it's because most people like to play an avatar of themselves, at least on their first (or canon) playthrough.
I'm not a person that does that, but i've had the inquisitor (for my first playthrough) in mind since before they announced they were bringing the race options back.

My Hawke shares appearance and name with me only because in DA2 we were forced to play as humans (and because I was quite bored when I created her). When an rpgs allows me to play more than one race, I never choose to be human.
That's why my canon Gray Warden was an elf and my Inquisitor will be a female qunari mage :3

If I can get through my planned DA:O/DA 2 mage runs, then I will finish off the trio of mages. Unsure on the race atm, since this is something I have planned to do once I get my new computer sometime in the summer.
Dwarf Warrior will be my main Inquisitor, female if Varric is an option to romance(even if Varric is playersexual) if he's not available as romance than I'll be going male with the bushiest beard option.

Eventually, all of them. But my canon is most likely going to be an Elven female. I didn't really like the Elven origin stories in DAO, and played as a Cousland, rather. But I think it's going to be fascinating to explore more of the lore surrounding the original Elves this time around.
My prior canons include a rogue in Origins and a mage in DA2. I'm leaning towards warrior this time around, just for something different. We'll see what she ends up being in the end, though.
As for appearance ... either blonde or red-haired, only because I usually play with dark-haired characters and I want something different. But I'll go with darker eyes, for pure chocolatey goodness.

First run will be a female human rogue. But I'm sure I will try to platinum this game like the others, which will require many playthroughs. So, I'm bound to be just about every combination there is at some point. I'm fine with that. Human will always be my favorite to play as, though. And I don't normally play as a dude unless there's a specific reason to do so... There are enough Games out there that only allow me to play as a guy, anyway. Might as well rock the femquisitor while I can, yo.

Well, first of all, I always play a female character, and, thankfully, that's never been a problem in Dragon Age. In fact, it's always an awesome choice. XD
The first class I shall play will be a mage, as all my very first play-throughs of Dragon Age have been a mage. 
Second, it will be rogue.... as all my second play-throughs are rogues, lol.
I've never been keen on playing warriors for some reason.... in fact, I don't think I've ever made one!! I am either a rogue (need to pick those early origin locks, damn it) or a mage, because the mage origin and subsequent interactions with others have always been very interesting! Plus, I've always had a warrior romance in my party (Alistair, Fenris), and/or a warrior of awesome sauce (Aveline, Sten).
As for race... I am not sure! Human or Elven most likely for my mage. Maybe a Qunari rogue for my second go, although I may stick to human or elven.
My characters always have silver hair, as on my profile portrait, and are always very lovely... or as lovely as I can get them due to limitations of the character creation process.
So... a female elven mage with silver hair who will freak Cullen out... or a female human rogue with silver hair that will freak out some other hot romantic prospect, lol.

I'll try to play as all four races combined with the two genders, which'll mean 8 playthroughs in total. Things like appearance, weapon style, LI, or even gender might change depending on what's actually available in the game, Inquisitor's voice actors, etc. Anyways, I'll play in this order:
1- Male Human Mage: Specialization: Knight Enchanter. Party Members: Cassandra, Varric, Mustache Guy (Dorian?). Weapon Style: Depends on what a Knight Enchanter can use, Sword and Shield if available. Romance: Cassandra. Appearance: Either the default MH if I find him nice, or tanned skin, hazel eyes, black hair, aquiline nose.
2- Female Qunari Warrior: Specialization: Champion. Weapon Style: Two-Handed. Party Members: Solas, Sera, Grey Warden. Romance: Iron Bull or Solas or Cullen. Appearance: White hair, purple or pale blue eyes, grey skin, big horns, scars and some face paint.
3- Male Elven Mage: Specialization: Necromancer. Weapon Style: None? Party Members: Iron Bull, Vivienne, Cole (?). Romance: Sera or Solas. Appearance: Long black hair, dark skin, greenish blue eyes, sinister looking vallaslin.
4- Male Dwarven Warrior: Specialization: Reaver. Weapon Style: Two-Handed? Party Members: Cassandra, Grey Warden, Iron Bull. Romance: Cassandra. Appearance: Really short black hair, pale skin, brown eyes, scars, scruffy stubble, bushy eyebrows, a broken hawk-like nose, some tattoos.
5- Female Human Rogue: Specialization: Tempest. Weapon Style: Bows. Party Members: Cassandra, Grey Warden, Mustache Guy (Dorian?). Romance: Cullen. Appearance: Short wavy medium brown hair, pale skin, pale blue eyes, tiny scar on one cheek.
6- Female Dwarven Warrior: Specialization: Templar. Weapon Style: Sword and Shield. Party Members: Varric, Grey Warden, Solas. Romance: Varric if available, else Cullen. Appearance: Dark brown hair, brown eyes, pale rosy skin or dark skin (I'll decide later), a "perpetually smiling" kind of face.
7- Female Elven Rogue: Specialization: Artificer. Weapon Style: Dual Daggers. Party Members: Varric, Sera, Cole (?). Romance: Sera or Solas. Appearance: Short red hair, pale freckled skin, grey eyes, pointy nose, thin lips, high cheekbones, pixie-like face, smallest vallaslin available.
8- Male Qunari Mage: Specialization: Rift Mage. Weapon Style: None? Party Members: Vivienne, Solas, Mustache Guy (Dorian?). Romance: MG or Iron Bull or Solas, whichever is available. Appearance: Long white hair bounded back in a plait or ponytail, a small, braided beard, purple or green or blue eyes, bronze or purplish skin, face paint on lower half of the face, sort of looks like Salit from MotA.

I feel like a child in a sweet shop, I don't know where to go first! I never really warmed to playing as a warrior, so my first few playthroughs will definitely be as a mage or rogue, and to be honest I'll probably start as a mage because I do love magic and seeing peoples reactions to a mage PC. My biggest dilemma is human or qunari. I love playing as a human mage, but the opportunity to play as a qunari is so very tantalising. I love all the companions so far, and I'm also really happy with both revealed LI's. I'll definitely play as a female either way at least to start with, I don't spend forever looking for good games with female protagonist options in order to play as a man.
