And based on Mike Laidlaw's comments regarding griffins in Legacy -- his exact words were "At this point I can only promise statues", emphasis mine -- I believe that Griffins exist in a wild state on an uncharted or unexplored island somewhere.

Who knows? Maybe this is what Stroud/Alistair were investigating during Act 2.
