Nevarra, Orlais, Anderfels, Kal-Sharok, Tevinter Imperium and Par Vollen/Seheron (Qunari land in general)... Probably in that order. Antiva and Rivain could be saved for future games.

I'm very interested in Antiva and Rivain actually. Way more than Orlais and it's annoying accent. Nevarra seems kinda cool too, but it has too many templars, if I'm not mistaken. I'm a little sick of templars after Kirkwall.

Tevinter, Antiva and Rivain would be big ones on my list too, following that... ANY of the barbarian tribes. Close third? Well, I always enjoy learning more about the dwarves and Dalish.

i keep finding my random interests draw to kal-sharok, and anything that is considered sort of a fringe culture and not really part of the more well-known and well-established civilizations they may have loose affiliations with (barbarian groups of any sort, the Dalish, fog warriors, etc.)

I would love to learn more about dwarven and elven/Arlathan cultures, and Antiva in general. Tevinter as well, mainly as regards the slave trade and interplay between magisters.

Despite not being a fan of the accent, I'm really looking forward to finding out more about Orlais. MotA got me interested.
Especially in Empress Celene, Dowager Lady Mantillon...basically, I'm craving court intrigue. And lots of it. It'll hopefully be a refreshing change from Ferelden and Kirkwall.
I'm gonna be disappointed if there is not at least one masked ball where the PC has to ask a dance of the dowager to climb the social ladder. (Don't give us such interesting codex entries if you don't plan to use them, Bioware!)

Everyone is just listing locations. I'd be interested in hearing why people find a particular culture fascinating.
I'd like to learn more about Nevarra. But not because of their dragon hunts or conflicts with Orlais.
Ever since I read the Codex entry during DA:O, I've just been dying to know more about the necropolis outside Nevarra City. I love the concept of a country so full of artistry and beauty. How could that not be a delight?
ETA: I mean, come on people! They follow a burial practice outside the Chantry norm. How did that happen? Is it a source of theological tension? Is it some leftover practice from an older, displaced religion? Who else have we seen that follows Andraste but varies from the Chantry outside of Haven and Tevinter? Both of those places are portrayed very negatively.
