Why are we forced to play as the most boring race?

I probably would have played DA2 more if I could've played as a dwarf or elf. Human rising up through the ranks to become Grand Poobah? Not that interesting. Dwarf or elf rising up through the ranks to become Grand Poobah? Much more interesting. I might have even braved creating aFurbyelf just to become Kirkwall's first elven noble. Elf!Hawke's first proclamation would've been: "Eat it, shems." ....... *daydreams of what could've been*
Haha "Eat it, Shems."

Do you count yourself among them? It would sure explain a lot...

I told you, I can see the world from their point of view the way I cannot from a different ethnic group of humans. That's the point. Humans and elves are different "ethnic groups" (so-called) in this universe and so you cannot see both sides from one person. You can't play DA2 as Hawke and experience what it would be like to play DA2 from the perspective of an elf, dwarf or kossith because Hawke is not an elf, dwarf, or kossith. If Hawke was a human from an Avvar, Chasind or Rivaini background, Hawke would still never be able to see from the perspectives of elves, dwarves or kossith, nor would he or she be treated like one.
I think what he meant is that had they put humans in the place of elves, they'd be just as interesting as the elves themselves. But considering that they're being discrminated against because they are different from humans, even if it's just a small difference like pointy ears...
Tbh, I'd much rather get more insight into Dalish culture / ancient elven culture than the city elven one (I actually find that more boring than the humans), but I'm not sure if the plot of DA3 is going to allow for that. Though maybe that would make them distinct enough... I'm all for race selecton, though. (And since you brought them up, Fae, Avvar barbarians woud be awesome, but I really don't see that happening in DA3...)

I would love more insight into Dalish and Ancient Elven culture too, but I would also be interested in seeing how these insights affect modern Dalish and city elves and their relations with humans and each other. To be fair, both Witch Hunt and DA2 have made a huge deal of the Eluvian (and we knkow Morrigan goes through it no matter what you do, and usually with the OGB, and will be back), so it's very likely it can be significant in the near future.
