It's been a while since I've played this game, and I'm a bit perplexed that my thief can't steal when NPC's are in the room (even if they don't seem to be looking). Is there some trick to getting all the stuff in the containers?
Is there a trick for stealing from containers?

Several ways:
1.Prevent the guards from spawning:
Before you open container:
a. Attack everyone on the floor with fists until they are unconscious (can be troublesome in Tutu if they flee the area later when they wake up)
b. Charm everyone (e.g. with Algernon's Cloak assuming you don't think a >65k charges item is cheesy)
2. Guards spawn but you avoid them:
a. Have a Cleric in Sanctuary steal the stuff. (Opening the lock with a thief earlier does not trigger the guards.)
b. Hide in Shadows immediately after looting (pausing the game while you loot the container helps)
c. Move out of the area before the guards appear (Boots of Speed etc. helps)
d. Move to another floor, Hide in shadows there and then get out in shadows through the guarded area.
After about 8 hours, the spawned guards will be gone.
Some areas are tricky and may require more than one visit to steal safely from (Silvershield Estate, for example)

Thank you for asking, Aradeus, I couldn't understand how this works, either. And I didn't know that Sanctuary allowed you to remain unseen while stealing, that's really nice.

It's not whether they are "looking", it's whether you can see them. If an NPC is out of visual range, then you can steal no problem.
