Starcraft. Not many games are well balanced enough to develop into an e-sport, and Starcraft is probably the best among those.

Saddly I have yet to see a Mario (by nintendo that is) game that has sucked. Same with Zelda. A number of...more recent games have droped the ball, or threw it to another court.

Suikoden.
...but then, Konami decided yet again it'd be wise to dissolve the Suikoden team to have them work on other projects. I'm not sure I'd want to see a new Suikoden game, considering how well the disbanding of Team Silent worked for Silent Hill.
Apparently there was a Japan-only release in February...sounds like it didn't perform well.
And the cycle continues. Sigh.

The Metroid Prime Trilogy (I sadly have never played the 2D ones, I'm one of those young'uns) or, actually well that's about it.
I can make a few suggestions based on popularity and fan appreciation, but I haven't played many of them.

It's a tie for me between Dragon Age and Elder Scrolls.

Quake
Yeah, I'm a big time Quake fan. I just remember moving from pixelized Wolfenstein/Doom to smooth graphics and better game play and being totally blown away. I probably have 10 playthroughs in each game
(I, II, and 4), and an embarassing amount of time in Q III Arena. I really liked Quake II the best though! The franchise just never let me down, had a good following, and always seemed to give the fans what they (me) wanted.
That's probably the key criteria for me. Give me what I expect, don't let me down by being goofy or cutting stuff out that actually works, and either add more content or pleasant surprises enroute. If a developer is going to go in a new direction with a franchise, and take some risk, fine; but it better be either BETTER, or so seamless that it goes unnoticed or doesn't affect one's view of what it means to be participating in a franchise. It goes without saying that it better not suck. No "A"s for effort here; franchises are iterative consumer products that I will either enjoy or not enjoy consuming, based on satsifaction derived by the developer continuing to deliver what I've come to expect from the franchise and the precedents that have been set, and their creativity in mixing things up a bit. I supposed one could say I want more of the same...but better, as we move along.
Having said that, I think there are literally many good franchises that seem to be able to deliver iteration after iteration, so I would personally consider adding (by platform, and this is certainly not all-inclusive, and merely my opinion):
Fallout (PC)
Elder Scrolls (PC)
HALO (XBOX 360) [343, don't let me down!!!!!!!!!]
Unreal Tournament (PC)
Gears of War (XBOX 360) [Epic's never let me down between UT and GOW]
Uncharted (PS3)
These franchises have all delivered consistently for me.

Mass Effect for me.
Can't say I've bothered to record any other game series.

Maybe Borderlands if the next one/two are as good as the first two.

Well, I may not be a fan of Final Fantasy as a whole, but the series is certainly popular. It'd be in the top 5 for sure.
MY favorite franchise would have to be Metal Gear. The only game in that series that I don't like is Acid. The rest of it is spectacular.
I mean, I like a lot of games by themselves, but Metal Gear, as a franchise, is easily one of the best.
