Not like this. But like the taverns that my former rpg  partners were going after a battle against orcs in the White Mountains. My dwarf warrior taking advantage of your drunkenness to shave with an ax.
Once we sell a companion who was transformed into a wolf to the owner of the tavern.

I would love it if my PC and companions while on the road, could walk into a tavern, sit at a table, and have a drink or two and a chat about what is going on or what they experienced earlier, and depending on who is in your party you would get different dialogue. Or maybe have a drinking contest between friends. I think that would be fun.

Not all taverns would be like that, one on the docks would probably have rowdy sailors fresh from months at see itching for a fight and some drink. A tavern in the middle of nowhere would be fairly solemn and quiet with a small, smoky, fire and possibly a distrustful owner.

It really depends on the place. I'd like to see differentiation between the areas.

You mean like the taverns and inns in Baldur's Gate. Anyone remember the Friendly Arm Inn? That was a realistic tavern, but I guarantee that you did not dare start a fight in it. The barmaids were rumored to be iron golems masked by an illusion.

As for gambling in the Hanged Man I thought they played Diamondback and Wicked Grace. In fact even dog played Diamondback. Varric claimed he was better than Anders.

 I want a realistic tea party!  With bellydancers and singing puppets and ice cream fairies!

EDIT:  I was homeless periodically during childhood and teenage years (and periodically up to present age).  When I was young, there was a bar I'd sleep in because the owner thought I was deserving of help and there were no homeless shelters in that city.

Also as far as I know, a tavern from centuries bygone might have a few people sleeping over.  Realistically speaking, there would be floor blankets, cots and hammocks for unpaid stay-overs assuming the guest was reasonably clean and has been buying drinks and meals.  It wouldn't be as comfortable as an inn but might be cleaner than one would guess.

Honestly, though, I detest gambling mini-games. I'm a terrible gambler and mini-games just take up space that could be better utilized with more quests, companion banter and other junk that the game does a lot better.

Yeah I agree since I get addicted to the d*** things I blew $20,000 in borderlands at the slot machines and never learned how to play the minigame in the witcher 2. I am horrible most times at them
