Yeah, but you know, when some people make up their mind, there's no changing it. They find a way to rationalize their stance to themselves even if it makes no sense to anyone else. Typically, people who have a strong tendency for this kind of behavior are quite reluctant to change in general. So no matter how many times things like that quote are thrown in some people's face, they always come up with excuses like "auxiliary means cooks and janitors" etc.
Or, you could name a few instances from other fictional lore, such as LotR, where probably many would have thought it impossible for a few hobbits to destroy Sauron and enlist in the armies of the West, but hey, it did happen. Or when Han Solo, a smuggler, had a large role in the destruction of the Empire. I don't find it so difficult to conceive there would be a handful of Volus actually capable of frontline action, especially in supportive roles.
And then there's the thing that Bioware kind of created this universe, and at the end of the day dictates where how the canon develops. So if they decide that Volus volunteers with top-notch equipment and skillset are SpecOps ready, then that's how it is. It's the reapers after all. Even if the Volus haven't been willing or capable before, things tend to change when the whole galaxy is about to get wiped out.
But, none of this will probably turn any heads that haven't been turned already.
