Read the codex on the Qunari.  That helps you form your responses.
- You are in charge.  Act like it - don't try to be all nice with Sten because he equates that with weakness.
-He likes art - paintings will give you +10 for the first one you find.
-He likes it when you ask about his people - but don't repeatedly ask the same thing, because he'll give you some snide comment and you'll lose brownie points for asking stupid questions LOL.
-Keep your responses short and sweet.  "I'm not here to impress you" is one of the earlier responses that give you a + rating with Sten.
-Don't take him anywhere where there are no darkspawn.  That means Redcliff/Conor saga.  Yes, you can get some positive ratings from him if you tell Dwyn and Lloyd (is it?) to man up, but he considers the whole "side trip" a waste of time and a sign of weakness, and you'll lose major brownie points between defending the village and not killing Conor.  I just leave him back at camp.

He is my only decent tank, so I really have no choice but to take him.

Absolutely unnecessary. I always bring Sten every where I go and have rarely had issues. Not sure if it was due to my high coercion or my high approval rating with him but you can pursuade Sten to actually give you approval for saving the villagers at Redcliffe. You can also pursuade Sten that the sacred ashes are vital to your quest and he won't fight you. These are usuaully 2 of the earliest quests I ever do.

Sten is one of my favorite characters. He has a lot of depth if you take the time to raise his approval and do his side quests. As the others have said, just be sure to stay in command and don't treat him so much as a friend but a comrade in arms. You're in charge, act like it. Imagine being a commander and he's one of your lieutenants. You can talk with him yes, but he's not your bff like some of the other party members who would want to be.

His people are actually really fascinating if you take the time to follow through with finding out. Also, take him to Lake Calenhad and the fade. His fade nightmare is hilarious! :)

Lil and I are headed to Par Vollen with him first thing in the morning, should be an interesting trip.

I got +26 approval for explaining parents to him. Huzzah. All you need to do is be abrupt and don't press him for info or keep questioning his culture. I'm at 82 approval with him from just the Mage Tower and a little bit of Denerim.

A big trick to talking with Sten (not sure if it's been mentioned) is to end the discussion when he says "let's move on". Keep the talks short and sweet and you'll get your approval rating up. That means not taking every dialogue option in the same discussion. You can start a new discussion right away, but as soon as he suggests moving on, end it.

This is my mindset whenever I talk to Sten.

Sten is a soldier. Nothing else. If you treat him like a Soldier, and command him as if he were your soldier, you'll generally get a + approval rating.

Reading the Codex entries will tell you what items will gain the approval of the party members. It is possible to raise Sten"s approval to a high level before initiating a conversation or taking him with you as a companion. This is true of all the companions. Some I never take with me or talk with but that doesn't prevent me from having a high approval score.
