I am just wondering and wanted to ask everyone. I havent played since it first came out but for some reason I have the desire to play again. Can anyone tell me about the patches they have put in and what would be the best and easiest class and race to play on?

Regarding race, it doesn't make much difference in terms of gameplay. So you may want to choose something you haven't played before.
Regarding the best and easiest class, well, opinions will vary. Playing as a tank(warrior/arcane warrior) is probably easiest as you'll have comparatively more survivability. But the 'best' class will depend on what you consider to be 'best'.
If you are DPS hungry, probably a dual wielder warrior/rogue is your thing; If you want huge burst damage numbers, probably a 2H warrior; if you want to be a nuker, consider a caster blood mage; for ranged damage dealing, archers are awesome, warrior or rogue, provided you build them well; if you want to go up close and personal with occasional casting, probably an arcane warrior; tanks for drawing aggro.
So, it's upto you what is best.

The mage class is the easiest to play as, and is widely regarded as the most powerful.

But would it be worth waiting to get until I get the arcane warrior specialization? I do love to bash heads in with swords

Of course, but as you can see, Fade shroud is only available at level 16, you have to manage aggro carefully at the beginning. But don't expect to deal much damage with a sword playing as a Sworld and shield arcane warrior, and you'll miss quite a lot in the beginning till you start beefing up your spellpower. A SnS arcane warrior's true power is in it's sustainables, and is probably best suited for a tanking role.
You may also play as a spellsword kind of AW, in which you'll initiate battles with a staff, debilitating foes as applicable, and then rushing in to deal some melee damage, while your main tank holds aggro. You may also play as a nuker AW, basically taking the specialization to just equip mana/willpower boosting gear, and casting with a staff as usual.
