Keep in mind, for Zevran to tell the story of his final mission to a friend, the Taliesen encounter has to be finished and the approval has to be high (+76 Friendly). The warden has saved his life and freed him from the Crows. The friendwarden has done more for Zevran than he probably ever thought anyone would.
However, he will tell this same story to a lover at Adore. That says to me that the feelings Zevran has to a lover before Taliesen are equal to that of a friend afterwards.
Edit: There are also a couple of times you can tell other people that you and Zevran are in love, even before the Taliesen encounter. It can be played casually, but it my no means has to be. But either way, Zevran has deeper feelings going on. He trusts a lover, feels (s)he is more than he deserves, even before Taliesen. I think by the time he hits "adore" he cares for the warden more than he's ever cared for anyone else.
Second edit: I wonder, though. Maybe the reasons he will tell a lover/friend at those various times is because he is finally feeling valued as a person. I don't think I could ever play it casual at that point, now that I think about that.
He could be aware that he's in love and hiding it, but I think I prefer to look at it as if he isn't (isn't aware, not isn't in love). He only seems to start admitting it at the end, after Taliesin. I think that if he was aware of it so early on, he'd feel afraid and uncomfortable. I don't know what he thinks it is, if not love, but he seems to be able to think of it as good and life-affirming. As for when love starts, hitting adore sounds right to me, even though it's early on (or has been when I've played. I can't resist that tent.) I believe him that he's been confused since he first came to the tent.
I'm not familiar with playing as a friend, but I think either way, no matter when that dialogue comes, he needs the warden. He was different when he was with the Crows - who brought that line up yesterday about him slitting somebody's throat for saying the wrong thing? And the way he was with Riinna - however, noble he is when we know him, he didn't act that way before the warden (although I think he had it in him). He feels like he's nothing after Rinna, then the warden makes him feel like something, a better something. I think. His self-image depends on the warden. I think that's not immediately obvious, because he is so -un-needy and independent, apparently, and asks so little. But I think that if he was driven off, he would lose that feeling of being something, and there would not be a happy outcome for him, most likely. Whereas Leliana (the only other lover you can drive off) would be fine, I think.
It's difficult that he trusts so much so early with a lover, and yet you can't reciprocate. I'm playing a Dalish elf at the moment, who I think wouldn't be nearly so clueless about love as my other characters, yet he can't say anything. I suppose the point is that the warden has completely changed Zevran's life by that point, yet he hasn't changed the warden's life, not to anything like the same extent.
