This is what I was about to say. The problem is the approval system in general--it can be far too easy to boost up approval extremely quickly. Especially with Zevran and his giant first-time-tent boost, things can get out of hand. It can feel as if not enough time has passed to really develop those feelings.

On the other hand, the whirlwind nature of that situation can still be RPed. Hitting adore quickly could give a sense of the confusion he's going through, and part of why he doesn't really understand his feelings. It just depends on how you choose to play the romance.

Still, I tend to find his approval shooting up way faster than is probably healthy...

That is EXACTLY it.  If you're decent to him, his approval goes way up, so quickly. If you romance him, he falls hard and quickly.  I deliberately space out conversations, don't go to the tent with him, take middle of the road answers.  That way, at least, there's some feeling of it taking SOME time.

I actually got the quickest approval from Sten  every conversation was practically +13 approval.

Sten easily gives the quickest approval--I think you can get him up to 100 in ~4 conversations. But that's to make up for the fact that his conversations are confusing, it's easy to get disapproval with him, and he doesn't have a lot of conversations (since it's more difficult to get his comment-triggered conversations).
