I've just started a mage character and saw that Ser Jory was immediatly weary of me. My question was which other people in the game have special dialogue for mages.

Alistair has some funny dialogue about Mages, if you're a mage, the first time you meet him. Obviously First Enchanter Jowan, Wynne, Gregior and all the rest of the Circle-related NPCs treat you somewhat differently.
I have to admit, I don't remember Jory saying anything about me being a mage. I'm abaout to start a new playthrough as a mage, so I'll keep a lookout.

Yes, some NPCs do react differently when you point out being a mage. You do get different dialogues/reactions, many of them reflecting that most people fear mages.

Yeah, like the mayor of Redcliffe relating his misgivings about magic, and Zevran having a few things to say about mages when doing the tower quest. Morrigan's dialogue also has some mage-related things in it, so does Ser Bryant's and the revered mother in Redcliffe.
Also in Redcliffe the mage PC gets to go into the fade her/himself when allowing Isolde to make amends for her misdeeds, and the reward from Eamon is mage-related.
All in all there are differences. Some funny some not so, but playing a mage was much fun. So much that I'm going at it again as a mage, just like in my very first play-through.

In a lot of instances when normally you have the option to intimidate someone by saying "Do you really want to mess with a Grey Warden?" you'll also have the option to tell them you're a mage and watch them stumble over words in an attempt to not have a fireball flung into their face. Quite fun!

I find it highly amusing that everyone seems to think that mages turn people into toads. I've yet to see that, but I so wish my mage could turn various NPCs into toads.
Just a few.

I liked Alistair's reaction to my female mage:
"Really? You don't look like a mage. How...interesting."
Does he have that reaction to male mages? I was thinking it was an instant attraction thing, given his love of magical items.
