I am currently preparing to start another playthrough of the series, but
I am having difficulty deciding on what class to play. My previous
playthrough was as an Engineer, built primarily around Incinerate and
Overload. He was played essentially as a caster most of the time, with a
minimum of shooting throughout most of the game.
I've been able
to mostly narrow my
choices down to either an Adept or Sentinel. I'm mostly wondering which
class is more fun on mid-high difficulties (no higher than Hardcore in
all likelyhood); I don't really care about power/effectiveness quite as
much.
Any guidance that could be given for this matter would be greatly appreciated.
Adept or Sentinel?

I prefer Adept myself. Sentinel is good, but I dislike it for a variety of reasons which I will not get into here.
For the Adept I like this build:
4 - Heavy Warp
4 - Heavy Throw
4 - Heavy Singularity
4 - Pull Field
0 - Shockwave
4 - Bastion
1 - Stasis
I like to build it like this:
1) Put 1 point into Warp, Throw, Singularity, and Pull as soon as possible. This is possible by level 4. If you can import a level 50 ME1 character, then you can do this after talking to the Illusive Man for the first time. If you can import a level 60 character, then you can do this immediately.
2) Max Biotic Mastery to Bastion for the duration bonus.
3) Max Singularity to Heavy Singularity.
4) Max Pull to Pull Field.
5) Max Warp to Heavy Warp.
6) Max Throw to Heavy Throw.
How I like to play:
1) Cast Singularity on the most dangerous enemy, typically elites, heavies, or troopers with shotguns. Singularity will drain shields, armors, and barriers over time. When they are drained, it will lift the enemy into the air.
2) From here, you have options. I prefer to shoot off the armor, shields, or barriers of any enemy, either the enemy in Singularity, or better yet, another enemy.
3) If I shot someone else, then I use Pull to lift him into the air.
4) Have Miranda (or Thane, or Liara in Lair of the Shadow Broker DLC) to Warp-bomb the enemy. This can kill the lifted enemy, and stagger other enemies in the radius as well as do damage to their shields/armors/barriers.
5) Shoot someone else to strip their barriers/shields/armor.
6) Pull again.
7) Use Warp or Throw.
8) And so on...
I mainly use Stasis on enemies unaffected by Singularity, typically on YMIR mechs, although it works great on Scions.
For squadmates with Warp, take the Unstable Warp evolution, since it has a shorter cooldown for squadmates.
For weapons training, Assault Rifles is good for the Vindicator especially so you can use Carnifex - Vindicator - Shuriken/Tempest. Otherwise take shotguns. Casting biotics through a sniper scope is not recommended.
Singularity plus Warp is a good biotic combo, but it is also your longest cooldowns. Pull+Throw is quicker and kill enemies if you can knock them off the map.

For Insanity, I think Sentinel is the best. ME2 rewards the patient turtling player, since you can pretty much stay in cover forever. Tech Armor protects you against rushers when fully upgraded. Overload and Warp take care of all types of cover, since all of them have it in Insanity. If you have Miranda as a squadmate on top of being a Sentinel, you're pretty much set for every situation imaginable. Throw is not particularly useful on Insanity, IMO.
I used Squad Warp Ammo as my bonus power, and M12 Locust as my gun of choice. I switched to Stasis for the Collector ship since you can use Stasis to great effect on Scions on moving platforms (kills them, actually).

Once you get the Sentinel leveled up you can run around as much as you want with Assault Armor... as it staggers all units in a large radius and will partially recharge your shields when it breaks.

There's the big difference between them:
- Sentinel: on the frontline (unless you play caster)
- Adept: staying behind
