The best class for a mage tanker is AW and possibly the Spirit Healer so it can heal. If your thinking about a blood mage, that's kinda stupid.....because AW/BM is like doing dmg, but not much and tanking, but not much so it will make your character useless overall.

BM + blood ring reduce the cost of spells by 40% after the fatigue penalties. So it drops the cost of spells back to normal levels. Ad the life giver and some con and you have all the HP you need to go on for a very long time. another thing blood sacrifice is freaking awesome if you have one member specced in the ranger class

Personally, I prefer the look of wielding a two-handed weapon.
From an optimisation point of view, sword'n'board or duel wielding are both superior to 2H. It's all down to Spellweaver - it's a supremely powerful Arcane Warrior-only sword that simulataneously acts as an excellent main hand blade *and* has the stats to give you the same boosting effects as a Staff. And it can take a pair of runes to further power it up.
And it's one handed.
Whether you go for sword'n'board or duel wielding is up to you - dual-wielding has better damage output while sword and shield is a better balance between damage and defence. Personally I prefer dual wielding because a Massive armour wearing AW with Shimmering Shield up doesn't really need any further defence at the expense of attack and fatigue, and you don't really need the TWF talents to make good use out of a dagger and sword.

I do have to wonder where this idea that AWs are somehow not very good at doing damage has come from. They're no worse than any of the other specialisations other than Blood Mage. Going Arcane Warrior/Blood Mage gives you a mage that has the best defences and offences in the game, with the added ability to use whatever gear you want and can pitch in to close combat if need be. I can't think of a more potent combo. Blood Mage is all attack no defence, so pairing it with a heavily defensively-orientated specialisation torpedoes it's main disadvantage. It isn't remotely 'kinda stupid'...
Putting a Spirit Healer is redundant if you're only looking at it from a damage-dealer mage, as the extra survivability granted by SH isn't really noticed on the mage itself. It just means you've got a healer that can fight up front with the Warriors. Going SH will actually reduce your casting potential as it means you're entirely dependant on Willpower.
