Oh, renaming. That's one I'd forgotten to put down. But yes, I want that.
What do you want to do with your castle?

Torture chambers. Lots and lots of torture chambers where I can conduct my inquisitorial duties.

I want it to reflect my choices and who I am. Customization would be much appreciated, and torture chambers is a great idea.

Parties. Parties and drinking. Lots and lots and lots of drinking. Possibly some drunken displays of magic (oopsie!)
And some hold management as well I suppose. But mostly parties.

I want to build my castle next to a swamp so that it can sink into the swamp so that I can build another one that also sinks into the swamp, then I can build a third one which burns down, falls over, and then sinks into the swamp, but the fourth one stays up!!

I want to invite all the poor, crippled, and homeless over, throw a huge party. Lock all the doors and windows and set it on fire.

I shall host a massive party in my castle and not invite Gamlen.
I'm not sure Gamlen will know who this man that's not inviting him is, but nevertheless he will no doubt be crushingly hurt.

My answer to this would come from an older game known as suikoden 2. You get an abandoned castle and you have to recruit people of different skills to join you army. The army you named. the castle you named. each person had a different way of recruiting them. such as have a certain number of members in your army, have a certain memeber in your army, beat them in a mini game, your character be a certain level and so on. But the skill the charater brings to the castle improves your castle, like a sculptor gives you the choice of buldin a statue of yourself or a mascot for your army, and inventor will let you have an elevator and other cool upgrades, a farmer will grow food if you bring them seeds and animals, a armourer will make armour special for your army, and the better hammers you bring him the higher level armour, this will also include a lot more side missions and gameplay value. There really could be no end to the possiblities of having a castle. If its done correclty that is

Walk around and find out what my crazy companions are doing in their free time. It would be a funny cutscene to catch two of your companions making out in one of the corridors ;P.

That does sound funny. More so if they just ignore me and keep going.

A garden would be nice, filled with all the herbal ingredients that I would need to make potions.

Maybe the character gets to pick between an herbal garden where you can get healing and buffing ingredients, and something like Oblivion's Garden Of Venomgrowth that has everything you need to make someone regret refusing that irrefusable offer.
Oh, and farmland. Preferably customized so that the Inquisitor gets to grow stuff you can actually picture that char eating.

I just want an armory to display all of the cool weapons and armour I horde, instead of throwing them into a chest and never seeing them again.

I'd like a chest to store all the worthless junk valuable treasure I amass and I can send stuff to it at any location in the game. Divinity 2 had one in your fortress and it was nice not having to bother with mundane inventory management which I hate with a passion.

I'd like them to build on what they did with Awakening. Optional sidequests, holding Court/administering law, pronouncing judgements, building its defenses.
I really look forward to it.

Trophies - I'd like new objects or statues or whatever to appear in the castle after main quests (you visit a dwarven stronghold and after that an inanimate golem appears in the corner of the throne room for example, I think awakening had something similar). It always bothered me in DA2 when Hawke said "Where did I get that creepy statue"... where did we get that statue???
Quests in the castle - it always bothers me when you furnish your house in a game and then have no reason to come home and see all the furniture you bought. I'd like to see something interesting happen whenever I return to my castle and not just at the beginning of a chapter. In DA2 I liked the quest when your dog caught a thief and he was hiding in a closet. I wish that kind of stuff would happen more often.
Portrait or statue of the PC - maybe a blurred char portrait that would look like it was painted.
Pets - I'd like to have a cat or a dog (or both) that the PC would aquire somewhere. They don't need to be companions.
Gifts - If the companions (or LIs) give you any gifts I'd like them to be displayed somewhere.
Casual outfit - I'd like some normal clothes to wear inside the castle, like DA2 had.
Armor stand - if the PC gets some sort of casual outfit at the castle I'd like an armor stand equipped with the armor you are currently wearing.
PC comments - I liked the way Hawke would comment if you clicked on various objects in the house. It was really funny
