Castle looks nice, but appears a bit crowded. Maybe.
So..
Training Ring in the Courtyard (obviously) to get your hitting of the A button down
Forge for Custom Weaponry/Armor if that stuff is in the game
Stable for horses, walking across that bridge would get redundant really fast
Secret passageway leading to river/other side of the mountain, may be useful for lore purposes
Grand Hall with throne and feast table, again obvious
Treasury room in which you can:
-Customize visually. Banners, chairs, tables, statues, torches, etc.
-Customize defense(maybe) scorpions on top of towers, murder holes, etc. If the castle were to be put under siege, this would be key.
-Customize functionally (maybe). We have 4 empty rooms. Do you want them to be barracks or gardens or kitchens or whatever. Could add replayability if done well.
-Count and track your income if there are any sources other quest rewards-or if they are any losses other than what you spend...
A game that I had a castle that I liked was the first Overlord game. When you started, it was a beat up run down piece of crap because it had been sacked and looted before the game began. As you progressed through the game, it was gradually repaired and then made better than it was in the first place. I think that'd be neat if done well. The Overlord game only showed 3 or 4 stages of reconstruction, if memory serves (beat up-> beat up with scaffolds all over and dudes carrying building materials around-> ?-> fully restored). You could then throw away loads of your finite money on things like banners or stuff your mistress. I think it'd be a good concept to base the castle on if the castle itself progresses.
So, an adaption would be you conquer that bad boy at the start of the game but it gets all beat up in your conquest and you have to fix it up. Or the bad guys siege it, and the leader gets killed and passes the command to you. Then you rout the siege and have to fix the place up.
Then again, they are other ways to make the castle interesting then having to fix it or upgrade it. But it's an idea.
