I'm just having a hard time getting back into the mindset of jumping into 1-3 again. The endings for me went from WTF to "meh,could have been better" with the EC. Is there any advice or a different play style that anyone recommends.

I finished ME3 a couple months ago and want to romance someone new. I picked Liara and was full Paragon male shep. I've thought about trying Renegade but it hurts me being a total d*ck basically. But I am open to suggestion on anything. Is Jennifer Hale really that much better of a VO than Mark Meer?

I don't really suggest romancing any of the ME2 cast, Miranda and Jack was done well to a certain degree, but could of been way better executed in certain aspects; Jack and her emotional aspect is practically non-existent. I believe Miranda had the best romance concerning ME2 cast. You probably already know about Thane and Jacob.

Concerning Meer or Hale, I would suggest just going with what you're comfortable with, since they're both amazing in their own way, but I prefer Meer.

I always alternate between male shep and femshep from career to career. I don't have a preference when it comes to Meer and Hale both have their own strengths and do a decent enough job of making female shepard feel different from male Shepard. As far as alignment goes you could try renegon (mostly renegade with some paragon thrown in from time to time) That way you don't always have to feel like a total dbag but can still be ruthless to those that deserve it. I'd also try playing a completely different class than you were before.
