I ran across a wish-list of "fixes" for BG2 and it mentioned that if you freeze someone they shatter and all their items are destroyed, so the player avoided cold-based attacks in order to ensure he got the loot. Is there a similar issue in BG1? Should I avoid using items like Wand of Frost, Arrows of Fire, etc?
Does cold damage destroy items?

Yes, if the target gets killed by cold damage, items may be destroyed (except items critical to the main plot).

Fire does not have the same problem - items are only destroyed by being killed by cold or disintegrate spell or when something already turned to stone takes damage.
The effect only takes place on death - there's no chance of items being destroyed by a wand of cold if the damage won't be fatal . This makes the wand quite good for initial use to disrupt spells from enemies with lots of hits (like a certain ogre mage for example).
