1. Origins are not referenced much at all later in the game. They all converge at some point, and the rest of the game plays out with only some small cosmetic differences based on your origin choice.
2. A racial choice that doesn't have an origin gets roughly equal amounts of content throughout the game that are affected by that racial choice... e.g. a group of elves may treat an elf PC differently than a human PC, or a dwarf PC is the only type of PC that can become the king of Kal-Sharok.
The way I see it, the rough amount of content I get each playthrough is the same. So long as the content is fun to play, I'm fine with either.

But, let it be said that Origins with different races increases the variety and interest said Origins might potentially have, because, as seen in DA:O, you get to experience different cultures with beings of different looks, attitudes, etc. You can argument that an european is culturally and socially very different from an australian aboriginal, and you'd be right. But both are still, for example, living under the sun and not hundreds of meters underground in majestic cities carved out from the stone like the dwarves, all conquering towering and muscular horned giants like the kossith or nimble and thin tree huggers with pointed ears like the elves. You could add all those features to humans, but would they still be humans and not different races at that point?
I would also argument that the cost of making an Origins type of content with humans only is much higher than making different races. Because those Origins will still have to have different locales, models for places and characters, etc. I'd wager that the cost of modelling different races is rather trivial in comparison and as such, if you're going to make Origins, you should just go ahead and also create different races. It all adds to create a diverse and more appealing world.
DA:O proves that both features go together extremely well and provide extra hours of gameplay, lore and fun even after you're done with your main adventure, even if you stop playing after each origin is over and the main plot starts (which is what I've done with the different Origins in DA:O and enjoyed them immensely for all the extra plot and lore details as well as different locales

Racial choice expands roleplaying opportunities. Origins limit roleplaying opportunities. I don't see why they're being presented as similar.

Because the phrase "roleplaying opportunities" is not the same thing as saying "good game". (Although, of course, YMMV)

As far as I know, the only game to have multiple playable backgrounds like DA:O was... DA:O.
