The argument "Well Dragons were supposed to be extinct" is, quite honestly, a weak argument.
Obviously Dragons are not extinct in the DA universe.
We have seen them since the first game.
There is a huge difference between what the people of Thedas think and what we, as the player, know.
Most people in the DA universe go their whole lives without seeing a dragon.
Therfore, they believe them to be extinct.
But in actuality, they are not.
However, Griffons have been extinct for 200 years.
We have no evidence to disprove that.
I really doubt that the DA Team is just gonna punch their own lore in the face just because some of us want to see something that is extinct.
And if in the off chance that they do put Griffons in DA3, there probably will only be a handful and they'll all probably be in the possession of the Grey Wardens.

Why wouldn't they punch their own lore in the face? They already brought dead characters back to life because they felt like it.
Why not bring something back that will make everyone happy?

It's called Dragon Age because the series takes place in a hundred year era called the Dragon Age. The Chantry calendar breaks things down into century-long periods called 'ages'. So yes, I guess it does refer to a codex entry in the first game in a way.
Look, I think the idea of a Griffon companion or mount is silly, however I do agree that "Griffon Age" argument is a very weak one.

It's not as outlandish as ME3 and Javick. There are still regions in the DA universe that haven't been explored so who can really say ALL the griffons are dead? I'm sorry, but saying they're all dead seems more far fetched then saying there may be some alive some where.
