collectors specialize in armored and barriered units
for this reason the drell adept and justicar make mince meat of them with reave when speced for max armor barrier damage
the fury is also quite powerful with dark channel for the same reason
really anything that is solid against armor will work wonders, both vorcha characters when maxed flammer armor damage really shine especially considering how many units like to get in close, flammer's area of effect makes taking out swarms easy

The Human Engineer works well. Overload for barriers and Incinerate for Armour and initiating Fire Explosions.

Batarian soldier is really good against them as well. Max out ballistic blades to lay waste to them, and go for at least 35% damage reduction on your blade armor to survive scion shots.
I play with a "all melee, all the time" build, using a wraith + the new shotgun omni blade. Open with ballistic blades, then fire the wraith twice. if it isn't dead, Ballistic blades should be off cooldown as soon as you reload, so you can repeat the process. it feels good to get killstreaks from taking out 3 troopers, 2 aboms, and a posessed captain with a single ballistic blades shot.

Some will say that power classes are poor because swarms can cancel your cooldown, but that isn't completely true. Just avoid them. Or take a class with Annihilation field (Valkyrie is really good against them) and it will stay active anyway.
Weapon classes are probably the most straightforward for fighting them. Destroyer can practically just tank all the swarms if you want. Just be careful of the Praetorian move speed if you don't have an adrenaline module on (same if you take a standard Turian...).
Most important thing about fighting Collectors is shooting the Praetorian in the right spot. The "head" is under the belly panels, where the skulls are. It will even give you credit for a headshot when you shoot it in that spot.
