You don't, you get Wynne when you visit the mage tower.

aye if you left lelianna or sten in lothering straight away its not a issue, but when you complete one of the main quests to recruit a certain faction to the army, lothering gets destroyed.

Poop! I was really hoping to get Lelianna! But I couldn't find her. Trying to get Sten without looking like a Dick was hard and didn't even get him.

lelianna is in the tavern and with her in the party getting sten is easy

You can't miss Lelianna if you enter the tavern. As she comes up to you in the movie clip that loads as soon as you enter the tavern. Explore explore explore.

Yes, she can pick the lock to the cage... I think it is a bug though.

Nope.  She perished with the rest of the Chantry there unfortunately.  So will Sten if you do not recruit him.

It is vital you do EVERYTHING you need to do in Lothering before you leave. Fortunately you do not get any Lothering quests anywhere after you leave so if you are thorough you never have to return.
