I generally read, garden a bit, cook and bake. I also play a PnP rpg once a week, visit a few forums, do the church thing, and write. We try to go to the theatre (live performances) and travel as much as possible.
You'll know when the men in black helicopters start monitoring my life by the sudden increase in chopper accidents. Most people would find it that dull.

Drumming. It never gets old, and is a great form of catharsis from those long days.
Spoofing. Whether in or out of the gaming scene, I admittedly have a habit of playing the jester.
Reading. Currently nibbling on the Game of Thrones series.
Writing...or at least it used to be my hobby...

Digital art (mostly 3d and photoshop manipulations. I sometimes do a painting here and there.), making clay dragons and other little trinkets, reading, herbal remedies (lotions, soap, teas, and oils), homemade candles, archery, magic the gathering, creating 3d terrain boards for games (like the new game of thrones board game and DnD), learning about the Celts, editing my gaming videos, and I like to collect swords.
I'm sure there are a few others I'm forgetting... I do a ton of crap.

I'm an avid reader and gymnastics fan/blogger. I also like to make mock garments on Illustrator when I'm feeling inspired. I used to write often, but, lately, I've just been spewing my crap on the interwebs instead.

Outside of gaming, huh... it's actually quite alarming how much gaming has steamrolled over my other hobbies.
I play the keyboard... well, I used to. I don't think I've touched the thing in over a year.
I paint, my brother recently got me into altering Magic cards...which I also haven't done in a while.
I write, which is something I've been doing since I was 7, although I think I've wrestled with writer's block more than I've actually written...
I make and sell jewelry even though I myself can't stand to wear it.
I have a terrible addiction to New York Times crosswords.
But all of those are tossed aside when a shiny new game gets released.

* Strength training @ home gym with free weights
* Cycling
* Target shooting, collecting firearms and handloading my own ammunition
* Traditional archery
* High mountain hiking & climbing

Used to build models but that has become too expensive. <_<

I'm primarily into gaming and modding games; have been that way for years.
However I also enjoy blu-ray movies (action/fantasy/sci-fi/martial arts are favs), and reading good old-fashioned paper books (fiction).
Also live a minimalist life such that everything I own (excepting car) fits comfortably in a single room. Much easier to keep things clean that way. I developed this habit after having to move multiple times in the span of a few years. I'm also debt free, single, and childless. I'm rather enjoying life these days, while my neighbors live from check to check, with lots of bills, in cluttered homes with screaming children and nagging wives.

Pretty much similar to OP. Had over 1000 videos in the 90's 
Love collecting rare movies and alternate cuts of them. Have huge collection of workprints, rare cuts, tv versions etc. Have only maybe 150 dvd's and several Blu-rays of films I actually rewatch now - Towering Inferno was first buy, Aliens Anthology and Rec 2. Have hard-drive and a few videos/dvds of rare cuts. Most extreme is Halloween films 8 movies I have tv versions of 1,2, H20, workprint of Resurrection, remake and H6 as well as producers cut of 6.
Hate being told what I can and can't watch so the UK banned/cut movie list is more a shopping list for me so have or have seen every movie mentioned.
Ghosts fascinate me so read everything on subject and have huge number of documentaries on it. Amityville was obsession at one point so have lots of info, including blue-prints of house etc.
Have coffee table books on Titanic - old obsession - and on Mayan civilisation, mainly about there buildings.
Aside from that I help out occasionaly for mental health charities and enjoy spending fun nights out at the pub with lots of beer.
