Does anyone know if it's possible to extract all of the dialogue text from a module? And how, if it is possible?

I can't believe it, I was looking for the same thing these days.
I haven't had the time to try what Lightfoot said, but I tried this http://nwvault.ign.c...r.Detail&id=393 (NwnMultiLang 1.1). It exported all the text from dialogs, journal, item descriptions etc into one txt file, and I think you can choose which files not to export. I can't guarantee for it, though, it just looks like it works (when I run it on Windows XP). Oh, and you lose the tree structure, you can just see all the strings.
