Instead not being able to hit on the non romancable companions I want to hit on them and get rejected.

I agree. Obviously Aveline doesn't return your advances if you flirt with her and this was great. It made it feel much more as if she had her own mind. I don't know why we weren't able to flirt with all companions, though (edit: actually, I think in DA2 we were able to flirt with them all, except siblings.) It makes it much more meaningful if you don't know who is going to respond positively and who is going to decline you.

Aveline never aknowledges the fact that you're hitting on her and it never even gave me the option to hit on Varric. It also didn't give me the option to his on Sebastian.

I've never encountered an opportunity to flirt with Varric.

I would like to see this, too. It would also be an effective means of concealing from the player which companions are romanceable. (Well, provided they'd avoided spoilers.)

To this day, I wish my dwarf noble Warden could have confessed her feelings for Sten. Obviously all she would have received in return would have been a confused look, but it would have been a nice bit of roleplaying.

Then I think what you are really asking for are more opportunities to flirt with non-LIs, regardless of the PC's gender. The ability to flirt with all non-sibling companions seems to be something that we've already had - even if it was difficult for the player to accomplish this.

Anyway, I still agree with the sentiment that there should be more opportunities to flirt with non-LIs, and I think this is something DA2 took in the right direction. I think it was also possible to flirt with Sister Petrice, if I recall rightly, and nothing ever came of it.

In that case Hawke should be able to persist and be rejected. I really just want to get rejected a few times before I get to the companion that doesn't reject me.

I wouldn't hit on same sex companions, but I'd still want the option to see what would happen. I will however hit on Varric if given the option in DA3, screw genders and sexual orientations I LOVE HIM!

Warden: How you doing?

Sten: Fine.

Warden: No... I was hitting on you.

Sten: I do not understand.

Warden: Forget it...
