I find this interesting as well. As Orsino, for example, rose to the rank of First Enchanter in the Kirkwall Circle and elves populate the Circles in general alongside humans I had thought they (elven mages, at least) would have as much to gain or lose in the mage-templar conflict of DA3 as humans do.
Likewise, as others have pointed out, the city elves largely believe in the Maker as well. Racial prejudices aside, though elves do not normally "officially" join the (Andrastian) Chantry it seemed possible to me that an elf could have a place as the protagonist in Inquisition. It will be interesting to see how unfolding events affect the elves as they exist alongside their human neighbors.
