Not sure it would ever bother me. I played DA:O through so many times, that I am pretty sure I had every possible storyline/quest decision at one point or another.

to set canon means declaring a certain set of events, traits and actions happened, with no variations. 

The Warden could come from many Origins, two genders, decide many things (like the Dwarven king, curing/killing werewolves, saving Connor, etc.). Hawke could be two genders, be a Mage or non-Mage and could, amongst other things, side with the Mages or the Templars. 

That many options means there is no canon.

When you talk about canon in terms of game lore and concerning branching stories and multible outcomes it covers every possible outcome and cobination of story elements.

I see no rolling of eyes. That's more of a dubious look. I would use that if I were uncertain if you had no idea what we're talking about. But I'm sure that you do, so would need to roll my eyes at how clever you think you're being.

Not you character. Never was to beign with. It is BioWares.

If you really want to nitpick, consider the canon Wadern/Hawke an alternate universe...therefore not your Hawke/Warden.

Well, there is no canon Warden/Hawke yet so I don't need to worry about it. But if there were to be then it would be my Warden and Hawke that's the alternate universe. Not nearly so enjoyable.

I think it's unlikely BioWare would canonize Hawk or the Warden. I'm not sure if I'd like to play a game that would canonize either protagonist from the previous games.

Can't see the obsession people have with seeing old protagonists. The warden could be dead, so they can't really give a big role to him/her (especially since the blight is over, and the wardens have to remain neutral), Hawke is just a random refugee who was caught up between the war between the mages and the templars. S/he's not that important in the Dragon Age universe as a whole yet. Basically, both protagonists are disposable and are not as important as some make them out to be. Having them meet the protagonist is just a fan-service and is not really needed. They could do stuffs in the background, and the game could mention them to a certain extend but having them personally appear would just cause a lot of problems: Why isn't my LI with my protagonist?, my warden is an elf, why does my Hawke have boobs? They can't expect too much bad press for the game in which a lot of fans look forward to as "redemption".

From whose perspective?
As far as your Warden/Hawke are concerned, every universe except for theirs is the alternate.
