What would the Grey Wardens do once all the Blights are defeated?

No, it's right there in the lore that the Blights might or might not stop. And since in one of the books it's stated that the Grey Wardens know that the Old Gods really are the archdemons, and that the Wardens know where they are, it seems to me that the Blights will either stop (if other Dragons are an unworkable substitute) or drop off in menace (if they were as good, the darkspawn would probably search those out) when the other two Old Gods die.

They'll fight demons. Demons have trouble battling the taint.

But more to the point part of the joining ritual involves archdemon blood... so eventually they'll run out of Grey Wardens the way we know them. They'll be Wardens in Name Only.

Not to worry. I doubt Blights are going anywhere for a while and it's not like Thedas remains respectful of their sacrifices for long. They'll be here and largely marginalized for a long time to come.

Mages can magically treat your run-of-the-mill Darkspawn blood to work as well.

If Darkspawn and Archdemons were all wiped out, I'd imagine they'd stop making people drink might-kill-you-juice and dissolve as an organization. Hopefully they'd keep records of their knowledge and secrets (how they defeated the Archdemons), just in case.

As for fighting demons, abominations, and so on, that role is filled by the Templars. Not all Templars are on Mage/Chantry guard duty, nor is it the exclusive purpose of the organization, if I recall correctly.

That interesting, 1 Darkspawn = 1 Grey Warden, i think that is the new way of a new Archdemon to troll Thedas

The rite to even become a Warden has a high chance of immediately killing you.  Those who become Wardens are haunted by nightmares and taint.  They're also guaranteed an early - likely painful - death.  And joining the order itself pretty much involves giving up your life for the order.  I'd say most (if not all) Wardens are well past the point of being able to answer that question affirmatively.

Or all the darkspawn go nuts and zerg rush the surface, in a neverending hell of a blight that makes what Orzammar faces on a day-to-day basis look like the good ol' days.

Plus, if the OGB exists, the darkspawn might go after him!

If Ducan's the poster child for how recruitment works, they're all there because they were scammed into it, and found out that their choices with the Joining devolve to (i) maybe death by darkspawn blood or (ii) certainly death by sword-through-the-colon.

I can imagine that lots of Wardens might not be very keen on the whole self-sacrifice bit, even if they're making the best of their lot.
