Human. And if i have my way, i would never had the elves and dwarfs in Dragon Age at all. It was mistake introducing them in the first place, as they are way too generic for fantasy game, unlike the Qunari for instance, which are very well made.

Elf or Qunari. I'd probably favour the Qunari since they're unique to Dragon Age and elves are pretty much standard for fantasy settings in general.
I could care less for Dwarves though. Never really been bothered about them.

I usually liked playing both the human noble and the dalish elf in DAO. I like playing either of those races equally. Not that my preference is gonna matter......
