To those that play gold with different kinds of classes/races....

My question to you is, do you have a lot of variety when choosing your class/race before a game? How do you build a typically shieldless character? Or do you just stick to one or two options?
I have a feeling playing my Krogan might get a little boring. Thanks!

But each character plays differently and there is no "perfect" build for any particular character.
If you're not comfortable using a different character yet, try them out first, preferrably a lower difficulty to test out their abilities. When comfy, head back to gold.

I play every class (not kit), but I also got used to gold with my favourite one first (infiltrator) and now am happy to do play it with anything. I'm having the same experience now with Plat as I transition to it with infiltrators and will soon play it with other classes and kits. That's just part of the learning curve of the difficulty.

I'm good on consumables, mods, and dodging. my current weapon of choice is the Reegar Carbine. If using powers, I do pay attention to what weapons won't hurt my recharge time.

When the KroSol takes a rocket to the face, it'll barely tickle him. But if you're next to him with a squishy character, it'll take out your shields and the DoT will hurt you.
Stay near your teammates if you're not confident in your skills, but always put a distance of security between your teammates and yourself. At least 5 or 6 meters.

In my experience it's usually a good thing to go nuts first. So you quickly learn stuff you should not be doing
Furthermore, don't underestimate speed and agility. The AI has trouble getting a lock on your character if you stay on the move constantly. It isn't that hard to go rambo with the so-called squishier characters who usually have powers to crowd control which can be really good for survivability.
Don't be afraid to die (a lot). You learn more from making mistakes than using the familiar (more cautious) approach.

But here's what I can tell you every class/weapon works on gold and every class work on platinum given good weapons.
Generally learn how tech combo works (bio combo not as powerful nowadays), use weapon a bit more often on power class, or basically learn to shoot a weapon, don't just rely on powers; learn to use soft cover it's almost like cheating in this game that you can keep killing stuff without being shot back. Be aware of your surroundings don't hesitate to escape. Learn spawns, grenade is always effective to use when you know the spawns. That's all I can think of now.
