Do were ever see a population figure for the galactic species in the games? I know they have the population figures for individual planets. But about the individual races?

The only ones where I can say with confidence is humans and that's because we know for sure that more than 98% of the human population is still on Earth and the population of Earth is around 12 Billion people. Ergo, galactic human population is around 12 Billion, Alliance or otherwise.

If I must hazard a guess on the other races' population figures I would say the population figure of the more established races (the Council races) would be on the hundreds of Billions if not in the Trillion figure. Meanwhile, the lesser races like the Elcor probably have a similar population figures as the humans. What do you think?

Pretty sure trillions is mentioned at least once. A trillion is a big number though so probably not many trillions even if the non-human Council races are as numerous as you've suggested. But judging baby the number of people Shepherd keeps running into by chance I'd say it's more like a few thousand, and Shepard ends up killing most of them :-)
