In terms of gender,race, class and roleplay (good, evil, in between). Maybe this will give some generous modder out there an idea of what kind of companion to build. I'd  personally like to see a new female evil elf thief.

Sandal, seriously he's a beast. But to answer your question I'd like a D/W Warrior companion. City Elf could be good, male or female wouldn't matter. Roleplay something leaning towards Lawful or Neutral Evil if you go by the old D&D standards. Possibly starting off as L-E and through companion quest/dialouge options you could swing them more N-E or vice versa.

Female Dalish ranger

Qunari female - probably a mage (warriors are male in their society and rogue doesn't really fit their size)

Outsider - a new race from another continent whose ship got caught in a storm and crashed on Ferelden's shores



As for good or evil, how about neither? Some good acts they like, some evil acts they like, depending on their personalities (for example, depending on the mage's political persuasion)

An elven arcane warrior from when elves were still dominent in Ferelden, in a ruin like those in the Dalish Elf Origins and Treaty quests, whose spirit has slipped back into his mostly decayed body, who thinks he was only asleep for a night and that he was gonna have to clean up the "mess" the apprentices had made (the trashed state of the ruin and fixing his own "leprosy" as he believes it from looking at his hand or something) who starts out in very ancient, decrepit looking elven armor and a good sword and shield (also grungy)... that was longer than i thought it would be, might have to (try to) make that if I ever get good with the toolset.

I have just done a Female Dalish Ranger.  You start out with the Rogue, and at level 7 you take Ranger.  Was just able to summon my first Wolf.
