More options in general would be great, it's kind of disappointing using any CC that's come with the Dragon Age games. It's just so lack luster. Give me some options to add scars and such, just something would be great

Less rubber faces, much more options, long hair for male characters and hair that does not look like belongs on mr potato head or lego regarding the CC aspect.
If the fans can make the characters look so very good with mods/textures including decent hair then there is no reason why the creators of the game could not have made them much better to begin with.. There are mods that allow for dozens more hairstyles, hair colours, eye colours, tatoos and much more plus improved textures made by fans so there was no reason other than they just didn't bother regarding why Bioware themselves couldn't have added or improved their own CC and textures from the offset (imho).
With DA3 since they are using Frostbite now for next game they have very little excuse to not improve the quality of the faces and hair for CC. I also do not buy into this whole long hair messes up cutscenes, it only messes it up if the creator doesn't put in the effort to make it work. A lot of mods with long hair and other things do not mess up the cutscenes so I don't believe that is a valid excuse personally.
Basically the way I see it, if the fans can make such improvements then the creators should of done a better job of it from the start. Not leaving up to the fans to do the work for them. Especially since Bioware no longer seem to support mod tools.

Not sure what I want for the Character creation. Been happy with that bit in both games. Just add more options, i guess?

As long as I can still edit my character after the fact, I'd be pretty satisfied with something like the previous games. My only problem with, say, mass effect CC, is that its difficult to predict how your character will actually end up looking in various lightings and animations.

I'd love an in-game barber shop like they have in Fallout 3 and the Fable games where you can change your hair-style, beard, and makeup. I know the Mirror of Appearance could serve that function but a barber shop would be more immerse, for people who care about that stuff.
The thing I'd like most is for character creation to happen at the VERY beginning of the game, then you jump in and see your character's face and start playing (Origins worked like this pretty much, with one skippable cut-scene at the beginning.) I'm the sort of person who'll fiddle around with the sliders for a really long time, finally think "Yeah, that's the character I want,) then when the game starts and I see the face in the game's natural lighting I decide I don't like it and restart.
In Dragon Age 2 you have to play through a silly tutorial fight as the default character before you even design your character's face, then you see the face in more natural lighting and have to restart all over again. It got annoying.
Mass Effect 2 was even worse: there's about 20 minutes of unskipable cut-scenes and gameplay before you even get to the character creator. Then after I created a character I'd see them in the real game for a bit, decide I had the wrong complexion, skin tone and eyebrows or whatever, and have to go through those 20 minutes again and again. (Maybe there was a way to skip the scenes and I'm just dumb, but I was playing on xbox, pressed every button and couldn't find a way.)

eyepatches, more options relating to mouth shaping, ability to adjust the size of the head itself (make a big bald head like Lenin), don't restrict my mouth and jaw sliders when I have facial hair selected, more hair choices and colors, more facial hair choices.
