Was anyone else disappointed that this ending didn't include Morrigan and Alistair's demon-baby growing up to be an avatar of the Old Gods and ravaging Ferelden in a path of destruction and ruin, mentored by his/her mysterious and powerful shapechanging mother?

I was, a little bit.
I'm not exactly sure where you may think it's Allister's baby. I haven't yet played the female verizon of the game. However in my verizon, Allister and Morrgian can't stand each other, let alone find each other appealing to sleep with each other.
Morrgian is more of a very smart, sharp woman. Allister more of a weaker, sarcastic joker. They are very different. However with the ritual ending. I was disspointed myself I wouldn't be able to see the outcome when I started to do the ritual.
Even in a movie, you are able to see what the actions did to the rest of the people around them. Dragon Age 2 is coming out yes, but if Bioware has another two years of DLC content to be sent untill there, two years could be a very long time to see the outcome of the story.
Even though in Mass Effect 2 you coutinue playing as who you were, no one says for certain if you would be able to do the same in Dragon Age orgin's, though I would have liked it. An example is Knight's of Old Repblic, in part 2. You started off as a seperate person.
Who strangerly, like the first one forgot who he was. I am more then eager for the next release, if Knights of Old Republic goes MMO this year and with Mass effect 2, should be enough to keep me busy

You can convince Alistair to have the baby even if you are a guy. At least in my game, I responded to Morrigan's offer with the option along the lines of "You don't really expect me to do this, do you?" She then asked if my refusal was because of Leliana (who I had romanced) and when I asked if there was any other way, she told me that Alistair can also do it. So the gender of the Warden is irrelevant to convincing Alistair to do the ritual.
