You're right, there's no one else.
Except you're not because Sha'ira doesn't prophesize anything.

The speech from Planescape fits ME narrative (and especially the ending) so perfectly, that sometimes I think that the speech was one of the things that inspired ME writers. The fact that the speech was voiced by Jennifer Hale makes the assumption even more interesting

Only Shaira said nothing about the ending, or even something about Shep's future except there is going to be one.

It still counts, and that's what makes this trilogy so perfect.

Counts for what? Shaira never said anything besides the obvious.

Speculation. It's a wonderful thing.

Again, Unless telling you ME3 would have had an ending brings speculations into your mind, then I don't understand what's there to speculate.

Um... What does ME3's ending has to do with Shaira's "prophecy"?

No, she didn't. But it would be great if she did...
...Maybe she sent Shepard a video-letter? It was so private that BioWare decided not to show it to players

If you are trying to say that the Planescape Torment work inspired the writers in ME, then you may be correct.
However, that does not mean that the ending was planned from the beginning. Inspiration does not equal planning. You can get ideas from inspiration while planning but that is not evidence that the end was planned all along.

Sha'ira sent Shepard a private 'video letter' saying the same thing.

That'll be great... Only it has nothing to do with the prophecy, or even the game besides personal headcanon.
Besides, if the letter is THAT private then believe me, the ending would be the last thing Shaira will write in it...

Devs state that there was originally going to be a plot related to Dark Energy slowly destroying the universe, and that the Reapers were the only way of stopping it. At the end of ME3, the player has the choice of letting the Reapers continue their work (essentially Refuse as it is now), or destroying the Reapers but then being faced with the challenge of overcoming the Dark Energy Crisis (like a no-casualties Destroy). The Catalyst and Crucible were shoehorned in near the end of ME3's plot development.
You can find lines in ME2 that would have foreshadowed the Dark Energy Crisis, particularly at Freedom's Progress, Haestrom, and Tali's Loyalty Mission. Haestrom's abnormal sun would have been a key point for ME3, as it was an example of "what was to come".
