I'm not a loyalist, but I like ME (yes even ME3 and the extended ending). I am also a grown up man, so I kind of know what I like or dislike and what I want or don't want. But answering your questions:
I never really cared for a new hub world (in a war story one hub is perfectly enough for me, and I never found the Citadel to be more boring than it was in the last two games). What you're talking about is only some fans who hyped themselves up by something which never was promised.
I also don't see what a new additional squad mate would add to the story or to the overall feel of the story. I don't want a batarian or vorcha or whatever squad mate just for the hell of it. I also found the huge amount of squadmates in ME2 completely ridiculous. Never cared for a good half of those guys (Jack, Miranda, Legion, Grunt, Kasumi). It also wasn't promised.
I'd rather buy dlcs which focus on their plot (be it self contained like Omega or more related to the core story and lore like Leviathan). The thing I want is a good adventure, a good story with good characters which adds to the saga as a whole and I don't care wether it adds to the ending or not (why would it anyway). I find the ending with the EC and with Leviathan just fine.
About Chris' statement. I have to agree with him about this one. Taking fan feedback into consideration and maybe use some of the ideas they find good and fitting with what they intend to do with the dlc and taking every desire or demand from the fans' part seriously and try to add it to the story no matter what is two completely different things. The first is a cool thing to do and is withing reason, while the latter is ridiculously absurd from several points of view.
