I'd probably never romance the evil ones, but it would be a nice addition. In fact as long as I'm wishing, I'd like to see the romance option leave or be killed for attacking me if they are not alined with my character.
I like 2/2/2. 1 male and one female each. Everyone has four options, 2 M/F and 2 S/S. And there isn't 100% overlap.

Fenris begins to like Bethany, and might even fall in love with you, a mage, and assist you in supporting mages. Yes, you are never able to utterly shake him of his distrust, but you are able to have a powerful influence over it. I don't take qualms with this, actually--you are given seven years with the guy, after all. And I'll point out that the rest of your examples (excluding Anders', but you're never even made aware of his plan) all possess some form of subversion. Isabela will come back, Alistair can be convinced to become king, etc.
But I am speaking mostly in terms of personality and personal boundaries. All of the characters will literally romance anyone, provided you flirt with them at the right opportunities and complete their quests. The only type of character who cannot be romanced is a purely hateful and nasty one. In reality, people are less compatible with certain types, are unwilling to pursue others, etc. In BioWare games, you have to be a bottom-of-the-barrel **** to dissuade them.
