I give everyone a warmth balm and play as the mage of the party (morrigan, wynne or if your main character is one) and just stand back and let everyone else have at it. As a mage make sure you can heal, be a spirit healer, and learn Group Heal and Revival. I like to use the dog because for some reason the dragon has trouble hitting him. Shale is a bust against dragons. She falls down too easily and takes forever to get back up. Oghren is good, he usually is the one who slays the dragons.

Seriously though, the Dog (and Shale) can't be grabbed by the dragon making him quite useful.
