I suppose they'll keep making them until they get sick of them and want to try something else. Or until they no longer make money.

Two conditions must be met.
It must be sufficiently profitable to justify funding.
The developer team must want to continue working on it. They will get bored with Thedas eventually, and move away for a time or maybe forever. That doesn't necessarily rule out the possibility of the Dragon Age IP being licensed out to another company or another development team being brought on board to continue releasing new games in the setting though.
