Has anyone tried laying down traps before going to the final battle? Will traps laid out beforehand be present once you trigger the fight?

No, the nighttime defense map appears to be totally separate from the daytime map. You'll need to lay traps after speaking with Teagan or the mayor and choosing "wait for nightfall".
