What, exactly, was interesting about Saren?

There are NPC's on the Citadel with a more fleshed out character than him.

Sounds like some people need to go back and replay ME1. Saren was the most interesting villain in the series aside from the Illusive Man.

A great charater because he is simple and his motives are simple (revange) if you did read the book and comic with illusive man.

He is not some "special, super, beautifull, mysterious, smart, strong etc etc." kind of charater. He has flaws and that is what is making him believable.

Certainly not, I just look at Saren without my rose-coloured glasses on. 

We learn next to nothing about him until his speech at the end, and then Shepard says two sentences and he commits suicide, or you just shoot him. 

Hardly a compelling or fleshed-out antagonist. 

You learn everything about Saren at Vrmire.

As in: he realizes that opposing the Reapers will be futile.  And if you don't want to go the way of  the Protheans (i.e. extinction) you should instead ally with and yourself useful to the Reapers.

That makes him less of a videogame Villlain and more of a Bioware villain (see Loghain from DA:O).  Saren isn't killing people and helping the Reapers because it's lulz.  He's helping the Reapers because he believes that it is the only way that any organics will survive.

That you (as Shepard) ultimately disagree doesn't make him evil in the true sense.  In light of the disaster that was ME3, who knows?  Maybe Saren had it right all along.

The "I HATE HUMANS" thing is sort of a separate issue entirely and he really doesn't express that much hate for humans during the events of ME1.  If anything, at Vrmire, he seems to respect Shepard.

I thought the Virmire confrontation was one of the highlights of the game. It gave Saren a plausible motivation for his actions instead of just being a bloodthirsty nutcase or pursuing his own self-interest, and it's a nice twist when the supposedly powerful bad-ass villain is openly arguing for what amounts to surrender.

Saren and the Catalyst have something in common - they both think some horrible outcome is inevitable (Reaper victory in Saren's case, organic/synthetic war in the Catalyst's) and end up inflicting their own horrors on others in an attempt to work within the confines of the supposed inevitability.
