 Mine are the ME2 Collector theme (first heard in the collector ship's first attack on the old Normandy in the beginning sequence), and the ending sequence epic theme, as well as the Thane/Ilium theme.

Oh, that's almost the whole ME2 soundtrack!

What you said is aces, definitely. But I always shiver when I play Bring Down the Sky and free Kate Bowman from the holding cell. The music in that segment is a real tearjerker. I think this theme is also used later, on the Normandy right after Virmire, and also in ME2 LotSB with Liara aboard the Normandy SR-2.

I actually didn't play the Bring Down the Sky DLC until a few weeks ago. I didn't know I had been missing literally the best DLC of the entire franchise.

ME1 and 2 have better soundtracks then 3, for sure. Jack Wall and Sam Hulick made a incredible work with those songs.They could even work on an eventually ME movie. (if ever happens).

For me the best tracks are the Spectre Induction, From the Wreckage from ME. As for ME2, Illusive man, The Normandy Reborn and the Suicide Mission. Samara's theme is also nice.
