squad choices relevant to story?

Hi, I'm new to ME and just started playing ME 1 a few days ago. Completed my squad members and then went off on side missions. Now before I follow the main storyline further, I feel I need some info:
1. Does it matter at all who accompanies me where, in terms of endings/outcomes etc?
2. If I take my romance interest on missions, do I get some relevant dialogue even on the planets, or does that all strictly take place on the Normandy?
3. Who should I really take where to get good convos?

you dont really get banter in me1 like u do in the dragon age games or the other mass effect games, most of the companion dialogue is on the ship as u noticed, an taking any member wont change or effect the ending of the game but keeping to to the 2 companions for all the game does give you the companion achievments for the related companion, the only real change in dialogue on missions is for the obvious, like taking liara when u comfront her mother etc

you only really also get new dialogue with the companions after each of the major quests in the storyline is complete
