I was wondering how much of the game I am into because I've done both of these with Noveria left.
I've done NO side missions because it has never seemed like the right moment.
Is this the right way to play?
How much of the game's story is left?
The game is really badly paced because it always seems like our mission to catch Saren is urgent yet we have loads of side missions to do between Noveria, Feros and Liara.
All of my companions are like 'this is it' and it seems like I've skipped ahead a lot.
I've done Feros and Liara - how much of the story am I into?

I did side missions by stopping in the intermediate systems and the ones that connected to the main missions after doing those. Main quests remaining are Noveria, Virmire and then the last one. With no side missions the game is going to feel very short. The moment it feels really urgent is after Virmire. You know the full stakes by then and doing side missions will feel very silly. The other 2 games have the same problem, Collectors are kidnapping colonies all around while you deal with the crew´s psychological issues, and in ME3 you are looking for pointless relics when the Reapers are razing the galaxy.

Just be careful that you don't accidentally find yourself past the point of no return, after which you can no longer do any side quests.

Do them as you go, as Nerevar-as said the pacing and logical approach to all the side missions in all the games feels weird. In the future games like this need to add more logical points were side-missions actually fit, not make you feel like a time-waster avoiding the main event.

Yeah, you're about half way through the main story. If you want to do the side missions, do them now. But be prepared, because they're very low budget. And ignore the crap about it being "urgent", it makes absolutely no difference in this game. In fact, there's only one point during the whole series where doing side quests instead of the main mission affects the story.

I'm personally trying to get everything done before Virmire (I don't know if thats the "point of no return" - I'm just roaming around the galaxy doing side quests right now and waiting to start Virmire. I also wish they were placed more logically - It would be a nice pre-req to have to complete X side quests before the next story mission became available.

Virmire isn't the point of no return. In fact not only can you do sidequests after Virmire I think you can even do plot worlds. Fairly sure I left Liara until after Virmire one time just to see what happened. You are a bit restricted though. After Virmire comes a scripted Citadel visit, and when you leave the Citadel after that you will not be able to return. You can do as much planetary exploration as you like and as many non-Citadel side missions as you have left but anything that is still outstanding on the Citadel itself will be a dead end.
I see your point about X side quests before the next story mission, which is a bit like the way ME2 went, but the first game is more open and allows players who know the game and maybe have levelled up characters to skip most of the sidequests and do just plot missions. And to be fair some of the sidequests are tenuously linked to the main plot.
