I absolutely loved how Tales of Symphonia did it on the gamecube (altho not many of you have probably played it or even heard about it).

And it's possible that the numbers were off, or there are more combinations of choices that let you get that amount (though "perfect" Paragon or Renegade playthroughs shouldn't suffice, so I would characterize the choices you needed to make as "particular" rather than "right")—they were really only compiled to try to prove that it was impossible to get 8,000 assets, and it did fluctuate by a hundred points or so over time (but still never anywhere near 8,000).
You're absolutely right. There was zero, nada, none, no possible way to reach 8K EMS in the original release of the game. I helped datamine all the possible numbers with Fem way back in the day. The best one could squeak was just shy of 3900 (IIRC) - and that was including some asset numbers that existed in the .bin but weren't actually available in the game.
In any event, my only concern is that single-player achievements are reasonably achievable in single-player. If it's something you can almost never legitimately accomplish during the campaign but becomes trivially easy after 30 minutes of multiplayer, something is wrong. (Personally, I'm not bothered by multiplayer achievements that have no relevance to single-player, and vice versa—it's just when the two get mixed and end up only really being feasible for one of them that I think there's a problem: it should be an actual accomplishment regardless which direction you come from, and it should be equally possible from both.)
Agreed, at least with your second sentence. I wouldn't say I'm 'bothered' by separate achievements, but that in this particular case, seeing separate MP achievements would chafe me, as I don't really see a need for MP in what has been a SP game franchise. But I'm not an achievement monger, so in another situation, I second your general sentiment - that seeing SP/MP specific achievements is okay, as long as one isn't needed for the other to be completed, and yes, in a best case for any game, all achievements should be equally as achievable from either SP or MP approaches (in games that aren't MP specific, that is).

But that's just me. I'm advocating for as many options as possible, for roleplaying freedom, from "auto-looting" and "skip all battles, only want conversation" to "hide all romances I don't like - say, Merrill's or Leliana's" and "always hide helmets, especially in the inventory screen".
