I have like 11 saves and want to delete them all except 2, but there is no option to delete them ?  How can i do this?

You will need to go into the PS3 XMB software to delete saves manually. There's no option to delete saves in-game.

Also if you are uploading them and want to get rid of the profiles here as well go to My Games > PS3 > Manage Characters.
