Should I just play Engineer again? (Insanity Run 1-3)

First off, I've finished 1 and 2 with an engineer (male, paragonish, Ashley/Tali) already on veteran difficulty. I started playing three, but my computer died a horrible, painful (for me) death that destroyed my saves. Once I was set up again, I decided to try a different class, just for the something new. I started a soldier, and got bored. Then I started a sentinel, and realized that it didn't have any skills I really liked. Adept was almost really good, but something about it just didn't really mesh with what I thought the story should be. I don't mind the not-quite-magic on my companion characters. In fact, I think it's an awesome bit of game mechanics and lore. I just don't like it on Shep.
So I started another engineer (male again.) It was glorious! But, I was playing through 3 the right way, with no spoilers or tips or anything, and it naturally ended ... badly. I rushed through the game, and it felt wasted. So again, I decided I would do it right, and start a new character.
I want to try a perfect-ish female run of all three games, on Insanity because I've never done either for very long. I'm looking at all the classes, and none of them really seem that great in comparison. Soldiers are fun for a while, but only having guns gets a too dry after a while. Adepts, again, just seem off to me. Shepard doesn't feel like he/she should be a space wizard to me. Also, for some (irrational) reason, playing either Soldier or Adept makes me feel compelled to be renegade, which I don't really care for.
So, I'm looking at the character creation screen with a dead, blank stare. I want to click Engie again, because it is just so, so fun. I'm even mulling over arbitrary gimps for myself, like flipping coins to decide which loyalty missions I do in 2, just to guarantee my game will be unique this time around.
So, question is:
Should I waste a good portion of what's possible in the games to make the one true Femshep Engineer?
Or should I branch out and risk growing bored/annoyed with another class?

Infiltrator is good choice for Insanity because it is solid in all three games (as long as you take Neural Shock in ME2 as a bonus). In ME1 it really can be played as a more lethal engineer with Hacking, as Red stated, or you can play him as a Soldier with Tech if you take more weapon training (AR or shotgun). Although if you hadn't played through the game with a Soldier already I suppose you don't have weapon talents unlocked yet...
Alternatively, Sentinel is also a class that is fairly fun across all three games. I prefer a weapon talent here too, but you could run Hacking, which would help c/d on Sabotage and Overload as well. So biotic engineer... In ME2 Assault Sentinel is fairly fun, and ME3 has some ok variations of Sentinel as well.

Plus, if you haven't spent much time as Femshep, the game will be a bit different for you anyway.
And if your like me and spend a lot of time hanging around the board and reading about different classes, you'll get ideas and want to go try them.

Engineers in ME1 have excellent crowd control. Played right, nothing should be able to shoot you because all their weapons have been Sabotaged. Not to mention AI Hacking vs. Geth...

Yeah, Engineer is a solid class in ME1. It's only problem is being overshadowed by the Infiltrator.
ME2 Engineer is also a great class. Incenerate and Overload double as defense stripping and CC vs. their intended targets, organics and synthetics respectively. Drone CC's almost all the big nasties. Set him up with your bonus weapon of choice and he has no problems putting out the damage or completing Insanity.

Engineers have decent CC in Mass Effect, the big issue is that they lack a defensive power. Every single other class has either Barrier or Immunity, and the Engineer has absolutely nothing. That does not count Shield Boost, which is pretty pitiful compared to the other two, and every one else has anyway. I agree that you can be effective with an Engineer though, especially if you take a balanced squad. It is really a class for more experienced players though that already know the mechanics and how to use the squad effectively. I would recommend something like Liara and Ash or Wrex for Biotics, Tanking, and a combination of the two respectively.

While I pretty much agree with you on all counts, I was just responding to Christopher's statements about Engineer's lacking CC and damage, which I do not agree with at all.
When I play Engineer and Infiltrator, which I do a lot, I most commonly spam Sabotage and Overload, which effect most enemies pretty much equally. The big advantage biotic CC has over tech CC, in my opinion, is keeping organics from using Immunity.
