I think my favourites would be Asari, Batarians, Quarians and Turians in this order.
Or Elcor. I'd definitely go for Elcor if it was an option. = P

Not glorified like the council races, but showcasing more realistic social ability than the Krogan, Batarians, Geth, etc.

Sadly, the voice acting costs of hiring leads for multiple races makes me doubt this happening anytime soon, but given the choice I'd probably go with Quarian.

Actually, this is actually quite possible. Morphing the recorded voices isn't really all that hard, and they could just adjust the pitch and other variables per race. They'll probably need multiple voice actors though, because not every voice will suit every race.

Who's to say they'd have to get multiple actors? If they found the right ones, they could modify their voices for each race. Maybe. Heh.

If they were adopted as kids following the Reaperwar then if all playable species endedup living with a human family then they would likely talk and think more or less like humans, possibly with a few modifications to the sound.
Even a Geth would adapt itself to it's suroundings, which is pretty much what Legion did. I'm not sure if that would satisfy the people who want's to play as authentic Geth, Asari and others. Though Asari arn't that different from human women in most things.
A good question would be, what would people expect their species choices to do for them? Do they want every line to be unique? or would they be ok with just a few unique lines.
Do people need their Quarian to be hardcore Quarian, their Geth to be Hardcore Geth and the Volus to be archetypical Volus in their behaviour and interaction with others?

However being an Elcor sounds interesting.

With all those refugees on the Citadel and perhaps for example, people taking care of quarian children that lost their mother... you could have the protagonist be of any race and with a sad backstory to boot (optional).
Sure, that opens up a big can of other worms, but I like it^^
