Shepard can be a lot more racist than Ashley if you choose to. About the rest, Geth are not racist but simply cruel beyond reason with the Quarians, in the Morning War as well as in ME3 if you allow them to. And surely there are racists among the Asari, Krogan and Batarians (damn this part sounds like a song in my ears), but not the whole races.

I think the key difference is that Liara doesn't really question Shepard, while Ashley does.
Ashley also tends to be a misunderstood character. Some people came away with the mistaken impression in Mass Effect 1 that she was a racist bible-thumper, but that isn't the direction her writer(s) were going with her at all. She obviously believes in some form of a higher power or afterlife, but is never preachy about it. And while Ashley is somewhat distrustful of aliens, she's also hostile towards the Terra Firma party and will tell Tali that she hopes her contributions will help end discrimination against Quarians. She's neither a racist or a religious fundamentalist, but some players are very black and white in how they view things. To these players there isn't much room for a middle ground between atheism and religious extremism or racism and tolerance.

i agree with everything you said, but i dont think her character was TOTALLY butchered in ME3. However her look was overdone, and those deleted scenes shouldnt have been cut out
To be honest, i wasn't as upset about her looks as I was with her character. All those deleted scenes with Ashley should've been in the game, and i'll admit that her caution towards Shepard, while understandable, felt a bit overdone.
As for her new look. I don't mind the slightly different face, or the hair being down. But the outfit was really stupid and made no sense for her to wear, given who she is and the things she said in ME1. In fact it may be safe to assume that if the fans never raised a fuss about it, she may not have gotten her alternate armored outfit.

I disagree. Her updated character model (like all the other updated models) looks better than the original. They let her hair down and gave her some make up. No harm done.
Well, good for you. Ash was my favourite ME character, and I pretty much cringed everytime I saw her in ME3.

Ash in ME1 was ruthless....no she was not 'Speciest' nor was she a raving bible thumper...but she was ruthless, I do not find anything to like about that at all....I don't like Miranda or Liara for the same reason, at least Jack had a reason.
Poor old Liara gets a double whammy from me actually...I also have no interest in damsels in distress...aka Liara and Tali....BW is not very good at putting female characters together unfortunately, they have three flavors, ruthless, damsel or a combination of both....Kasumi, Gianna and ME3 Ash are when BW finally got it right....
ME3 Ash...I love the very realistic feel about her character (no, not her dress sense) and the fact that she is one of the few not on her knees before the great Shep....the sadly small amount of dialog she gets in ME3 is engaging, involved and very human....she has some of the best dialog in the game (sorry but Garrus tops all...

I just wish they hadn't sexed her up in the final installment. Let her wear a crew uniform like she did in ME1 with regulation hair, like a professional soldier. Maybe give her a job aboard the ship, in the Armory again, perhaps, instead of sealing her in the observation deck 'til Kingdom come.

That's strongly oversimplifying it.
I'm personally more libertarian, and I dislike Ashley simply because she rubs me the wrong way. She was fine (generally) in ME1. In ME3, she just grated on me (constantly questioning me / distrusting me, overall annoying attitude etc.)
